DRY ICE FOR WINE PRODUCTION

To cool grapes immediately after harvesting, dry ice – i.e. liquid CO2 – is ideal. It ensures that the temperature of the grapes falls rapidly, which maintains the quality and freshness of the fruit. This creates the ideal conditions for the right maceration of the must and the subsequent pressing out of the juice.
