Food-grade nitrogen and carbon dioxide from Messer are used for pre-packaged, peeled potatoes that have been boiled in their skins. The processing company can adjust the mixture ratio of the gases to the desired level and then use the mixture as a protective gas atmosphere in the packaging process. This prevents unwanted oxidation processes – thereby better preserving the flavor, vitamins and color of the potatoes.
